New Ketogenic Cookbook
A Book Review
Cynthia and Dennis Brake, both graduates of Johnson and Wales University with degrees in Culinary Arts, have 2 children on the ketogenic diet. Focusing their talents and skills, they have developed a wide variety of meals which sound delicious and also have kept their children in ketosis. These they now offer to parents and caregivers of children on the ketogenic diet.
"The Ketogenic Cookbook is a collection of ketogenically balanced recipes and menus, cooking instructions, time-saving suggestions, creative ideas, traveling tips, and a list of the equipment and supplies you will need [to prepare the diet. It was] published to make the ketogenic diet treatment as palatable and as easy as possible for the child, as simple and manageable as possible for the parents, and as successful as possible for the whole family." [Cynthia & Dennis Brake]
This 140+ page volume, with foreword by Dr. John M Freeman (Johns Hopkins University) and introductions by Dr. Philip Brunquell and Beth Chatfield, RD, CD-N, (both of Connecticut Children's Medical Center) is presented in 9 sections, organized to be informative and user friendly. Working with your child's dietitian, diet protocol and menu structure are discussed in some detail. An Exchange List shows at a glance what foods may be substituted and what must be avoided. Actual recipes and menus are printed with spaces to insert your child's prescribed weight of each item. Additional recipes which may be an element of a menu are provided and well indexed; alternative menus are provided for greater variety. One section focuses on ketogenically balanced holiday menus which can be eaten by everyone, to foster inclusiveness. Useful hints and checklists are provided to help plan vacations, complete with lists of disability-friendly hotel chains and theme parks. These and many other resources are, of course, aimed at the American parent, though much will be useful to people in Canada. A glossary and year-long seizure record chart round out this presentation.
The Ketogenic Cookbook is published by Pennycorner Press, PO Box 8, Gilman, Connecticut 06336, USA. It is available from them for US$14.95 + shipping costs. (Out of Print)
